Hearty Mediterranean Fish Stew

Serves 4

1 tbs Olive Oil
2 Red Onions finely sliced
4 sticks Celery finely sliced
1 litre Mures Provencal Fish Soup
200g Potatoes peeled, cooked and diced
2 lge Tomatoes skinned and diced (tinned are fine)
500g White Fish Fillets (Pink Ling, Blue Eye,) boned, cut into bite sized pieces
2 tbs Parsley rough chopped

In a large pot over a low heat lightly cook the onions and celery in the vegetable oil – do not brown. Add the Mures Provencal Fish Soup and bring to the simmer. Add the potatoes and tomatoes. Bring to a simmer, then simmer for 5 minutes. Add the fish pieces and simmer for a further 4 minutes or until the fish is cooked through. Top with the chopped parsley and serve with garlic bread.
